  • 2 1- lb flank steaks trimmed
  • 3 cups red onion thinly sliced vertically
  • 2 cups red bell pepper strips about 2 peppers
  • 2 cups green bell pepper strips about 2 peppers
  • 4 garlic cloves minced
  • 1 tsp salt
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1/2 tsp dried rosemary crushed
  • 6 tbsp sherry vinegar
  • 3 cups beef broth fat-free, less-sodium
  • 1 tbsp tomato paste no-salt-added
  • 2 bay leaves
  • 1/2 cup fresh cilantro chopped

  • 2 cups red bell pepper strips about 2 peppers
  • 2 cups green bell pepper strips about 2 peppers

  • 3 cups beef broth fat-free, less-sodium
  • 1 tbsp tomato paste no-salt-added
  • 2 bay leaves
  • 1/2 cup fresh cilantro chopped
Instructions
  1. Heat a large Dutch oven over medium-high heat. Coat pan with cooking spray.
  2. Add 1 steak to pan, cook 2 1/2 minutes on each side or until browned. Remove from pan. Repeat with 2nd steak.
  3. Reduce heat to medium. Add onion, bell peppers and garlic to pan; cook 7 minutes or until tender, stirring frequently.
  4. Stir in olives, salt, oregano, cumin, rosemary and pepper, cook 30 seconds or until fragrant.
  5. Stir in vinegar, scraping pan to loosen browned bits, cook for 2 minutes or until liquid almost evaporates.
  6. Stir in broth, tomato paste and bay leaves.
  7. Add steaks, bring to a simmer. Cover, reduce heat and cook 1.5 hours or until steaks are very tender. Discard bay leaves.
  8. Remove steaks from the pan; shred with 2 forks. Stir shredded beef and cilantro into pan.
  9. Serve with tortillas and hot sauce ohn the side. It is also suitable for tacos and burritos.
