Slow Roasted Salmon with Lemon & Dill

Ingredients
  • 1 lb salmon cut into 2 8-oz servings
  • 2 lemons sliced
  • 2 tsp olive oil
  • 2 tbsp butte r melted
  • 1 clove garlic
  • 1/4 cup fresh parsley and dill chopped
  • salt and pepper to taste

  • 2 lemons sliced
  • 2 tsp olive oil
  • 2 tbsp butte r melted
  • 1 clove garlic
  • 1/4 cup fresh parsley and dill chopped
  • salt and pepper to taste
Instructions
  1. Preheat oven to 225F.
  2. Wash salmon and pat dry
  3. Mix olive oil and garlic together and spread over entire fish
  4. Season with salt and pepper
  5. Cook for 15 minutes and then cover with melted butter. Cook 15 minutes or longer depending onthe thickness of the salmon. Use your thermometer or the fork method.
  6. Remove from oven, sprinkle with parsley, dill, top with lemons and serve.
