Cowpeas Sauce

Ingredients
  • 500 grams cowpeas
  • 100 grams onion
  • 100 grams tomato
  • 150 millilitre cooking oil
  • 200 millilitre chicken stock
  • 10 grams local curry
  • 20 grams honey
  • salt
  • water

  • 100 grams onion
  • 100 grams tomato
  • 150 millilitre cooking oil
  • 200 millilitre chicken stock
  • 10 grams local curry
  • 20 grams honey
  • salt
  • water
Instructions
  1. Sort and wash cowpeas
  2. Put in saucepan and boil 20 minutes until skin swells up
  3. Remove from heat, drain the water and remove the skin
  4. Put cowpeas back in saucepan and cook until tender
  5. Mash the cowpeas, add cooking oil and all ingredients
  6. Add stock bit by bit until desired texture.
