  • 3-4 Chicken Breasts Free Range, Humanely Raised or or Rotisserie Chicken Free Range, Humanely Raised
  • 1.5 cups green grapes
  • 1 head lettuce
  • 1 cup almonds julienned

Instructions
  1. Slice grapes and sprinkled with lemon; Toast almonds and sprinkle with salt
  2. Preheat Oven to 350 degrees: Place the chicken breasts on a sheet pan and rub with the skin with olive oil. Sprinkle liberally with salt and pepper. Roast for 35 to 40 minutes, until the chicken is just cooked. Set aside until cool enough to handle. Remove the meat from the bones, discard the skin, and shred the chicken in large bite-sized pieces.
  3. To make Vinaigrette:Reduce 1/2 cup of white wine to 1/4 cup and let cool Add juice of 1/2 lemon, 1 tbsp. chopped mixed parsley, mint and chives--I like more mint ( I usually triple the mint and add more of the others, too) 1/2 cup olive
  4. To Serve: Place sliced chicken on bed of lettuce, add grapes, vinaigrette and sprinkle with almonds
Recipe Notes

A reduced white wine vinaigrette loaded with herbs makes this easy to make chicken dish memorable. This recipe may serve 4 but there is always call for seconds so you might not want to count on that.
