Cheesy Zucchini Casserole

Cheesy Zucchini Casserole

Ingredients
  • 4 tbsp unsalted butter 2 Tbl melted
  • 1 tbsp vegetable oil
  • 3 medium zucchini diced 1 (about 2 lbs,)
  • 1 medium onion finely chopped
  • salt and pepper
  • 1.5 cups saltine crackers finely crushed
  • 7.5 oz farmer cheese 1 cup
  • 2 large eggs beaten

  • 1 tbsp vegetable oil
  • 3 medium zucchini diced 1 (about 2 lbs,)
  • 1 medium onion finely chopped
  • salt and pepper
  • 1.5 cups saltine crackers finely crushed
  • 7.5 oz farmer cheese 1 cup
  • 2 large eggs beaten
Instructions
  1. Preheat oven to 350
  2. In a 12" skillet, melt 2 Tbl of the butter in the vegetable oil.
  3. Add the chopped zucchini and onion
  4. Season with salt & pepper and cook over moderate heat, stirring occasionally, until the vegetables are softened, about 10 minutes.
  5. Remove from the heat and let cool slightly
  6. In a medium bowl, stir the cracker crumbs with the farmer cheese.
  7. Stir half of the mixture into the zucchini and season generously with salt and pepper.
  8. Stir in the beaten eggs
  9. Spread the remaining cracker crumb and farmer cheese mixture on top of the zucchini.
  10. Drizzle the casserole with the 2 Tbl. of melted butter.
  11. Bake the casserole for aobut 25 min, until lightly browned and crisp on top
  12. Let the casserole stand for 5 min. then serve warm
Recipe Notes

The zucchini casserole can be prepared earlier in the day and reheated in a 350 oven
