Blackberry BBQ Ribs

Ingredients
  • 3 cups blackberries
  • 1/2 cup balsamic vinegar
  • 1/4 cup granulated sugar
  • 1 garlic clove
  • 1/2 white onion sliced
  • 1 in habanero pepper cuthalf, stem and half the seeds removed (leave more seeds for more heat; less seeds for less heat)
  • 1 root beer (Virgil's Root Beer recommended)
  • 1/2 cup tomato sauce
  • 1/2 tbsp ground coriender
  • 1/2 tbsp cumin
  • 1/2 tbsp ground coffee
  • 1/2 tbsp chipotle
  • 4 slabs cooked St. Louis ribs
  • sea salt to taste

Instructions
RIBS
  1. Put 1/8" water in a roasting pan, place ribs, bone side down, salt them cover the roasting pan with foil and place them in the oven for 1.5 hours at 350.
SAUCE
  1. Add all ingredients in a saucepan and simmer on medium-low heat for 1.5 hours.
  2. Let the sauce cool, place in a blender and puree; strain through a sieve and set aside.
FINISH
  1. When ribs are cooked, remove from the oven and place on foil paper, skin side up.
  2. Turn oven on broil (500 degrees) and place the ribs skin side up, broil for 5 minutes.
  3. Remove, smear the sauce on the ribs and place them back in the oven on broil for one minute.
