Black Beans with Brown Rice and Toppings

  • 1 cup brown rice
  • 2 cups black beans with liquid
  • 1 tbsp cumin seeds or powder
  • Juice from 1 lime
  • 2-3 handfuls kale with ribs removed

  • 1 tbsp cumin seeds or powder
  • Juice from 1 lime
  • 2-3 handfuls kale with ribs removed
Instructions
  1. Toppings and extras for dish as desired:
  2. Hot sauce, garlic/onions, cilantro, greek yogurt, Extra Veggies, eggs, salsa, avocado, chipotle peppers
  3. Bring pot of water to boil, add rice and continue to boil with no lid until cooked 30 to 40 min
  4. In skillet, add black beans with liquid, cumin, salt, and lime juice. Bring to boil, reduce to simmer and cook until most liquid is absorbed
  5. Remove from heat and add spinach. Cover and let spinach wilt slightly. Mix in black beans.
  6. Serve black beans with rice along with variety of toppings and extras.
